The block (2) has mold blocks (3) that are placed between the block (2), and disk shape circular bases (8) provided with a peripheral crown (11) that is in the form of a cylinder. The crown has a ventilation side opening (13) for circulation of the air in horizontal sensible direction, where the opening is in contact with an upper part of cheese (16) placed at the inner of a unit cheese mold (4). The opening is discharged on the lower edge of the crown of the base (8).
