An object of the present invention is to provide a dry yuba that is not easily damaged during drying or after production and is compact before reconstitution with hot water, but can give a sense of volume after reconstitution. Furthermore, an object of the present invention is to provide a dry yuba that has a smooth texture such as fresh yuba after reconstitution with hot water. We have obtained the knowledge that one or a plurality of yuba is formed by folding or forming a cocoon and then dried and compacted and not easily damaged in the dry state, and the yuba spreads cleanly while eating and quickly returns to the hot water. Furthermore, the adhesive material, especially the thermocoagulable protein solution was made to adhere to the adhesive surface of a yuba, and the knowledge that the texture after a hot water return showed the same smoothness as a raw yuba was acquired.
