PROBLEM TO BE SOLVED: To provide a browning-preventing agent for yuba, capable of inhibiting the browning of the yuba observed at the later half of a pulling up process in producing the yuba, and a method for producing the yuba by using the browning-preventing agent. ;SOLUTION: This method for producing the yuba is provided by adding the browning-preventing agent containing an amino acid having SH group or a peptide, preferably glutathione as an active ingredient by 0.01-1 pt.wt. as the amino acid having SH group or peptide based on 100 pts.wt. solid portion of soybean milk and heating for forming a membrane to obtain the yuba.;COPYRIGHT: (C)2003,JPO
