The invention relates to wine-making industry, and particular to production of Igristoe (Spumant natural) enriched with natural fruits and berries. According to the inventive process there provided: processing wine materials, making tirage and dosage liqueurs, preparing fermentation mixture, secondary fermentation in sealed reservoirs using carbon dioxide gas, removing bottoms therefrom, cooling, maintaining at a given temperature and filtering of fermented mixture, adding a component comprising extractive and aromatic agents for preparing of which there used a substance obtained from natural fruits or berried, either fresh or canned, and also products of processing thereof, ageing on fruit and berry raw material resulting in enriching thereof with aromatic and extractive components, and also with microelements and vitamins, adding dosage liqueur (if necessary), rough filtering aimed at preserving some fine sediment of fruit or berry filler for continuing extraction of the aromatic complex and after bottling and isobaric bottling. The invention is aimed at using natural fruits and berries (both fresh and canned) as raw material comprising aromatic and extractive agents, and making a new product uniting advantages and qualities of sparkling wines and natural fruits and berries.
