: The present invention relates to artif icial sweetener Premix (termed as "Sucralose Premix" henceforth) comprising of sucralose as a main ingredient and other pharmaceutical ingredients in a specif ic proportion so that it can be used in place of sugar without affecting volume and texture of equivalent amount of sugar used commonly to prepare Mithai. Sucralose Premix is def ined on a suitable custom need based proportion in terms of meeting sweetness in taste and providing bulk. It also adds necessary organoleptic properties to replace the sugar composition in the Mithai product.
