bio polymers extracted from the fruit of ziziphus jujube chewing "lotus" were used in the single and double emulsions to replace petroleum based chemical molecules to encapsulate active ingredients, such as vitamins, food additives. the molecules of biological interest.this study has shown that the single and double emulsions are stable and the concentration of the solution of the gum of the fruit of zizyphus lotus.
