Process for obtaining sterols and polar lipids from lecithin by ulrafiltration and pretreatment by amylases and glucosidases

Simultaneous preparation of sterols (I) and polar lipids (II) comprising subjecting a composition (A) of plant lecithins to ultrafiltration so as to concentrate (I) in the permeate and (II) in the retentate, then conventional processing of these two fractions, is new.
