The present invention relates to a process of obtaining hybrid strains obtained by protoplast fusion of Saccharomyces cerevisiae and Torulaspora delbrueckii and the use thereof for conducting the complete alcoholic fermentation of red and white wine, as well as the use thereof for restarting stuck or sluggish fermentation. These new strains combine characteristics of both parental strains, namely the sugar consumption of S. cerevisiae, an ethanol resistance between those of the parental strains and an aromatic profile similar to T. delbrueckii. This invention further relates to the three strains obtained as well as to the combination of the three.
