A ventilation assembly, a curing and low temperature storing system, and a method using the same are provided to improve storage nature and quality maintenance of stock by discharging gas generated in a drying process automatically. A ventilation assembly includes a case(312), a frame(314), a shaft rod(320), a first opening and closing part(330), a second opening and closing part(340), and a ventilation driving part(350). The case is installed at a storing chamber. The case includes an opened first region and a second region. The frame is formed on an inner circumference between the first and the second regions. The shaft rod is inserted into an intersection part of the frame. The first opening and closing part moved according to the shaft rod.
