FIELD: chemistry; biochemistry.;SUBSTANCE: present invention pertains to microbioligical industry, and can be used in food industry in production of diet and diabetic products and in medicine. The method involves preparation of a culture medium, containing (g/l): yeast extract - 20; MgSO₄·7H₂O - 0.1; NaCl - 0.01; CaCl₂ - 0.02; KH₃PO₄ - 20; MnSO₄ - 0.01; FeSO₄ - 0.01; sucrose - 175. The culture medium is then inoculated with Leuconostoc mesenteroides "ВКПМ" B-9280 bacteria in quantity of 8% of the volume of the culture medium, and cultured without aeration for 12 hours at 27°C and pH 7.0.;EFFECT: increased output of biomass of bacterial cells.;1 tbl
