The device for producing cook-chill foods, comprises a heatable chamber (1), into which the concerned food is bringable, a supply pipe (2) for introducing a cryogenic liquid into the chamber, a sensor (3) for detecting the temperature in the chamber, and an outlet (5) for the chamber. The sensor has a temperature range of -85 to 200[deg] C. The cryogenic liquid is distributed in the chamber by an element for producing air circulation. The element comprises a fan impeller (4) rotatable around an axis and the cryogenic liquid is guidable on the fan impeller in the area of the axis. The device for producing cook-chill foods, comprises a heatable chamber (1), into which the concerned food is bringable, a supply pipe (2) for introducing a cryogenic liquid into the chamber, a sensor (3) for detecting the temperature in the chamber, and an outlet (5) for the chamber. The sensor has a temperature range of -85 to 200[deg] C. The cryogenic liquid is distributed in the chamber by an element for producing air circulation. The element comprises a fan impeller (4) rotatable around an axis and the cryogenic liquid is guidable on the fan impeller in the area of the axis. The introduction of the cryogenic liquid into the chamber is controllable. The ventilation of the chamber is pressure-regulated on a desired value, which is temperature and/or time-dependently changeable. A storage is present, in which all important parameters e.g. time, cooling period, cooking chamber temperature, initial- and final temperature of the product are automatically recorded after the cooling process. An independent claim is included for a method for producing of cook-chill foods.
