PROBLEM TO BE SOLVED: To provide aroma and/or spice extract microencapsulated yeast expressing aroma and also taste as eating time advances while having low aroma expression at the beginning of eating and thereby allowing an eater to enjoy the taste inherent in a food product, and imparting body feeling and luxury feeling to the food product.;SOLUTION: The aroma and/or spice extract microencapsulated yeast is obtained by coating the surface of a microcapsule in which aroma and/or spice extract are/is contained in the bacterial cell of the yeast, with oil or fat. The aroma and/or spice extract microencapsulated yeast coated with the oil or fat bring(s) satisfactory flavor-enhancing effect to the food product even with a small dosage to give satisfactory body taste and luxury feeling to the food product.;COPYRIGHT: (C)2010,JPO&INPIT
