PPROBLEM TO BE SOLVED: To provide a technique for modifying quality of tuna flesh in which pickled Japanese plum seasoning liquid is used in view of effective utilization of the pickled Japanese plum seasoning liquid and cultivation of characteristic tune. PSOLUTION: Feed for tuna is produced by making feed for feeding tuna such as mackerel contain the pickled Japanese plum seasoning liquid obtained as a by-product when producing seasoned pickled Japanese plums by soaking Japanese plums in seasoning liquid, or lactic acid fermented pickled Japanese plum seasoning liquid obtained by adding lactobacillus to the pickled Japanese plum seasoning liquid and fermenting the mixture. The method for modifying quality of tuna flesh includes giving the feed for tuna to cultured tuna or cultivated tuna so as to modify the quality of the tuna flesh. By the method, both of two problems of effective utilization of the pickled Japanese plum seasoning liquid and cultivation of characteristic tuna are simultaneously solved.
