PROBLEM TO BE SOLVED: To provide a method for producing processed fenugreek having characteristic sweet flavor.;SOLUTION: A method for producing processed fenugreek seed comprises: a step for preparing steeped fenugreek seeds, in which the fenugreek seeds are used without crushed and in the unground state of cotyledon covered with seed coat, water is added to the unground fenugreek seeds and added water is absorbed in the unground fenugreek seeds till unvisible with naked eye so as to prepare steeped fenugreek seeds; and a closed vessel heating step, in which the steeped fenugreek seeds obtained in the step for preparing steeped fenugreek seeds are used in the unground state of cotyledon covered with seed coat or in a ground state thereof and are heated under a practically closed conditions.;COPYRIGHT: (C)2008,JPO&INPIT
