PROBLEM TO BE SOLVED: To provide an instantaneous gelling agent in which uniform gel can surely be formed by anyone by only carrying out addition and mixing regardless of kind of beverage such as carbonated beverage or alcoholic beverage when pH of the liquid food is 6.0 and the organic acid amount of the liquid food is 0.5%, and long-term storage at normal temperature is made possible while retaining the quality without requiring special facilities, because pressurizing and heating sterilization at ≥100°C is not required in order to produce the gel.;SOLUTION: The instantaneous gelling agent for liquid food having pH of 6.0 and the organic acid amount of 0.5% is composed of separately packaged sodium alginate-containing solution and a calcium salt-containing solution. In the gelling agent, pH of the sodium alginate-containing solution is 3.8-4.2 and water activity of the calcium salt-containing solution is 0.94.;COPYRIGHT: (C)2007,JPO&INPIT
