PURPOSE: A freezing apparatus for formation of one directional ice crystal is provided to increase a sublimation speed of ice crystals, to improve a drying speed by promoting a mass transport rate, and to save energy. CONSTITUTION: A freezing apparatus for formation of one directional ice crystal comprises: a freezing room(30); a spiral cooking line(60) which is installed in a freezing room so that a central line of progressive direction of helix faces the upward and downward direction; a food-loading tray(70) which is installed inside helix and of which upper part is closed. The food-loading tray includes an outer cylinder(73), a first cylinder(71), and an inner cylinder(74).
