PURPOSE: A method of producing nutritious glutinous rice cake and the nutritious glutinous rice cake are provided to prevent the nutritious glutinous rice cake from going bad, and to improve keeping property and portability of the rice cake. CONSTITUTION: A method of producing nutritious glutinous rice cake comprises the following steps: preparing a mixture 1100 ~ 1400 parts by weight consisting of nuts and beans, sugar 110 ~ 130 parts by weight, milk 900 ~ 1000 parts by weight, and a leavening agent 95 ~ 115 parts by weight(S100); kneading prepared mixtures; removing bubbles while baking dough in 180 ~ 190 degrees Celsius for 55 ~ 65 minutes(S120); and cooling the baked rice cake in room temperature for 3 ~ 4 hours(S130).
