FAST-FERMENTED BEAN PASTE CANNED FOOD AND A MANUFACTURING METHOD THEREOF, CAPABLE OF IMPROVING CONVENIENCE FOR CARRYING AND KEEPING THE CANNED FOOD
PURPOSE: Fast-fermented bean paste canned food and a manufacturing method thereof are provided to make the canned food including fast-fermented bean paste which is easily consumable for a person by packing the fast-fermented bean paste with a can.;CONSTITUTION: A manufacturing method of fast-fermented bean paste canned food includes the following steps: mixing seasoning fast-fermented bean paste containing raw bean 79.09 weight%, bean-curd dregs 7.03 weight%, refined salt 5.48 weight%, white sugar 1.96 weight%, anchovy 1.83 weight%, red pepper powder 1.76 weight%, starch 1.76 weight%, MSG 0.88 weight%, sea tangle powder 0.10 weight%, a pyogo mushroom 0.10 weight% and IMP 0.02 weight% and water 35-50 weight%; cooking and sterilizing a fast-fermented bean paste mixture by heating the mixture in 100°C or more; seaming the fast-fermented bean paste mixture in a vacuum state while maintaining a temperature(S50); heating the canned food in a sterilization device for 5 minutes in 108°C; heating the canned food for 50 minutes; and heating the canned food for 10 minutes in 120°C(S66).;COPYRIGHT KIPO 2010
