A method for preparing pullulan by using a fermentation material of soybean curd dregs is provided to produce pullulan by using the bean-curd dregs fermentation product as a nutrient source of microorganism. A method for preparing pullulan by using a fermented material of soybean curd dregs comprises the steps of (a) preparing autoclaving the solution crushed with bean-curd dregs, adding hydrolase and fermenting it; (b) preparing a microorganism producing pullulan by inoculating and cultivating the pullulan production strain into the first culture medium containing the bean-curd dregs hydrolysate solution; (c) producing the pullulan culture fluid by cultivating the pullulan production strain in the second culture medium containing the bean-curd dregs hydrolysate solution; (d) extracting and precipitating the pullulan by mixing supernatant obtained by centrifuging the pullulan culture fluid with organic solvent; (e) dissolving and filtering the precipitate obtained by centrifuging the precipitated pullulan; and (f) precipitating the pullulan obtained by adding organic solvent to the filtered pullulan, vacuum filtering and freez-drying.
