PROBLEM TO BE SOLVED: To provide a drying device capable of drying fruits and vegetables by controlling interior temperature and humidity without irradiation of far infrared rays and a carriage capable of uniformizing the drying state without moving on the interior side and easily carrying in/out the fruit and vegetables.;SOLUTION: The drying device comprises: guide passages 4 guiding heating air to the bottom of a drying chamber 1; and blowers 7 supplying air on the upper side within the drying chamber 1 and air heated by a heater to the guide passages 4 while mixing the air with each other. The guide passages 4 are constituted to form a pipe shape and include intermittent openings 41 on the upper faces. The carriage comprises: a bottom and a top constituted by a frame body; support columns supporting the top; wheels supported by the bottom; and partition members dividing the top into a plurality of regions. A bar-shaped fruit and vegetable support member is suspended between the partition members, and string-shaped fruit and vegetable hook members are hung from the fruit and vegetable support member.
