PROBLEM TO BE SOLVED: To provide a method for treating the surface of a sweet potato after harvest by which color vision and sterilizing effects of the surface of the sweet potato can be improved to improve the distribution and storability.;SOLUTION: The method for treating the surface of the sweet potato includes: a step for treating the surface of the sweet potato with sterilization water, a step for acid solution treatment of the surface of the sweet potato which has been treated with the sterilization water, a step for drying the surface of the sweet potato which has been treated with the acid solution, and a step for treating the dried surface of the sweet potato with an oil in an amount of 1-10 wt.% of the weight of the sweet potato for 30 s to 5 min.;COPYRIGHT: (C)2011,JPO&INPIT
