PROBLEM TO BE SOLVED: To provide a refrigerating system and its operation method, which perform stable control under any operating condition, and save on energy, in controlling a supercooling device so that a degree of superheat of a refrigerating device and the like, is kept to a proper value at all times.;SOLUTION: The refrigerating system comprises: a refrigerating cycle 20 for refrigerating or freezing, a refrigerating cycle 21 for supercooling; a heat exchanger 12 for supercooling, which allows the refrigerating cycle 20 for refrigerating or freezing and the refrigerating cycle 21 for supercooling to exchange heat with each other; a control device 51 for refrigerating or freezing, controlling an operation of the refrigerating cycle 20 for refrigerating or freezing; and a control device 52 for supercooling, controlling an operation of the refrigerating cycle 21 for supercooling.
