A method for fermentation of wort from carbohydrate-containing raw material provides for preparation of wort, cultivation of yeast and its fermentation in fermenter. For intensification of biosynthesis of alcohol during fermentation its level in beer is reduced by means of circulation of beer through the vacuum evaporator, wherefore beer is supplied to the vacuum evaporator. The produced aqueous-alcohol mixture is condensed and directed for further treatment, and the beer with reduced content of alcohol is returned from vacuum evaporator to fermenter.
