PURPOSE: A method for preparing medicinal herb extract with improved flavor and taste is provided to maintain the efficacy of the medicinal herb extract and to be used as a food or cosmetic composition. CONSTITUTION: A method for preparing medicinal herb extract with improved flavor and taste comprises: a step of preparing medicinal herb extract; and a step of adding cyclodextrin, derivative, or polymer thereof to the medicinal herb extract to capture volatile perfume ingredients. The medicinal herb materials are selected from the group consisting of Rehmannia glutinosa, Dioscorea batatas, Cornus officinalis, Paeonia suffruticosa Andrews root bark, Wolfporia cocos, Torilis japonica Decandolle, and mixture thereof. A food composition or cosmetic composition contains the medicinal herb extract.
