ANTHOCYANINE DERIVAIVES WITH IMPROVED STRUCTURAL STABILITY AND A METHOD FOR SYNTHESIZING THE SAME

PURPOSE: An anthocyanine derivative with improved structural stability and a synthesis method thereof are provided to produce anthocyanine derivative with high purity and high efficiency. ;CONSTITUTION: An anthocyanine derivative with improved structural stability is denoted by chemical formula 1. A method for synthesizing the anthocyanine derivative comprises: a step of adding water or alcohol solution containing acid to black soybean seed coat and performing cold enfleurage to extract anthocyanine crude extract; a step of filtering to remove impurities; a step of concentrating to obtain anthocyanine crude extract; a step of fractioning and extracting the anthocyanine crude extract with water and ethyl acetate to prepare a water layer; and a step of purifying the anthocyanine extract with 10-60% alcohol solution containing hydrolchloric acid to isolate anthocyanine cyanidine 3-glucoside.;COPYRIGHT KIPO 2011
