The present invention relates to a method for producing vegetable meat from which soybean flakes have been removed, and to a vegetable meat produced thereby, and more particularly, to a method for producing vegetable meat from which soybean odor has been removed by adding saponin and vegetable meat prepared thereby. . Vegetable meat according to the present invention has the effect of removing soybean odor by adding saponin. Therefore, the vegetable meat according to the present invention has an advantage of ingesting vegetable meat having a taste and texture of bulgogi, seasoned chicken, and jerked meat without the unpleasant feeling caused by soybean odor.
