PURPOSE: A strawberry flavored seasoned anchovy and a manufacturing method thereof are provided to remove a fishy smell from the anchovy by applying seasoning liquid including strawberry flavored seasoning syrup to the anchovy after puffing the anchovy with microwaves. CONSTITUTION: A manufacturing method of strawberry flavored seasoned anchovy includes the following steps: boiling anchovy after washing the anchovy with seawater; drying the boiled anchovy to a moisture content of 30%; removing a head part and internal organs of the anchovy; inserting the dried anchovy into a microwave output line; irradiating microwaves for 35 ~ 40 seconds; preparing seasoning syrup by adding strawberry extract 3 ~ 5 weight%; coating the anchovy with the strawberry extract seasoning; and drying the anchovy to a moisture content of 5% or less.
