The present invention relates to an emulsion (1) as a finished additive in foodstuffs based on comminuted raw materials such as sausage meat masses or ground meat masses, comprising: a) an outer water phase (2) containing at least one water-soluble antioxidant dissolved in water; b) an inner fat or oil phase (4) containing oil droplets (6) of vegetable oil provided with at least one fat- or oil-soluble antioxidant, wherein the vegetable oil droplets (6) are each surrounded by a shell (10) of vegetable protein.
