PROBLEM TO BE SOLVED: To provide a method for readily, efficiently and enzymatically synthesizing a diester of quinic acid and a derivative of the diester of the quinic acid by an ester-interchanging reaction in an ionic liquid.;SOLUTION: The method for enzymatically synthesizing the derivatives of the diesters of the quinic acid by the ester-interchanging reaction in the ionic liquid by an immobilized enzyme by using vinyl esters of cinnamic acids obtained by subjecting the carboxy groups of the cinnamic acids to ester-interchanging reaction with vinyl groups, and a cinnamic acid ester of the quinic acid as substrates includes the following steps 1 and 2: (step 1) a step for subjecting the carboxy group of the cinnamic ester of the quinic acid at the quinic acid site to methyl-esterification; and (step 2) a step for subjecting the methyl-esterification product and the vinyl esters of the cinnamic acids to the ester-interchanging reaction in a hydrophobic ionic liquid.;COPYRIGHT: (C)2012,JPO&INPIT
