PROBLEM TO BE SOLVED: To provide man-made rice richly containing nutrients of soybean, causing little deterioration when eaten and also even when left long after cooked as well as just after cooked, having excellent palate feeling and appearance, and naturally eatable even when being substituted for cooked rice or mixed with polished rice, and to provide a method for producing the man-made rice.;SOLUTION: The man-made rice is produced using kneaded powdery soybean mixture prepared by charging soybean powder and water into an extruder and kneading the mixture, as a main raw material. The method for producing the man-made rice includes charging soybean powder and water into an extruder, kneading the mixture while keeping the intermediate barrel temperature to be at 75-155°C to prepare a soybean powder mixture as a main raw material, taking the soybean powder mixture out of the extruder followed by charging the soybean powder mixture as the main raw material and an auxiliary raw material into the extruder, and further kneading the mixture while keeping the intermediate barrel temperature to be at 0-95°C to obtain the mixture, subjecting the mixture to extrusion molding to mold the mixture into a rice grain-state shape, and drying the rice grain-shape mixture.;COPYRIGHT: (C)2009,JPO&INPIT
