PROBLEM TO BE SOLVED: To provide a method for producing a sparkling alcoholic beverage by using a product obtained by Maillard reaction, and the sparkling alcoholic beverage produced by the production method.;SOLUTION: The sparkling alcoholic beverage is produced by using a step for producing a liquid to be used for fermentation by adding the Maillard reaction product obtained by heating xylose with an amino acid or a peptide before boiling for producing the liquid to be used for the fermentation, and boiling the resultant mixture with other raw materials for the liquid to be fermented, a step for obtaining the sparkling alcoholic beverage by fermenting the liquid to be fermented by using a yeast, and a step for filtering the sparkling alcoholic beverage after the fermentation step. The Maillard reaction product can be added at any time of from the start of the fermentation to the step after the fermentation in the production process of the sparkling alcoholic beverage.;COPYRIGHT: (C)2008,JPO&INPIT
