Porphyran-specific degrading enzymes produced by Cerrophaga bacteria

PPROBLEM TO BE SOLVED: To provide an enzyme effective for hydrolyzing porphyran and a microorganism producing the enzyme. PSOLUTION: The invention provides a porphyran-specific decomposition enzyme having the following characteristics: (a) it has hydrolytic activity specific to porphyran; (b) it is produced by bacterium belonging to the genus Cellulophaga; (c) the molecular weight determined by SDS-PAGE is about 42 kDa; (d) the optimum pH is 7.5; and (e) the optimum temperature is 30C.
