摘要

The present invention relates to a ready-to-serve punjabhi-style catla curry in a retortable pouch and process of preparation thereof. The retortable pouch has a three layered configuration having atleast a first inner layer of 12.5 µ thick polyester sheet laminated with 12.5 µ thick second aluminum foil layer and atleast a third outer layer of 85 µ thick cast polypropylene sheet. A thermally processed catla fish and conventionally prepared curry medium in a predetermined ratio is placed inside the retortable pouch and hermetically sealed. The packed catla fish curry possesses a Fo value of 9 and extended shelf life of 12M without refrigeration.
