the present invention describes the manufacture of muscle protein hydrolysates (common cuttlefish sepia officinalis) emichis antihypertensive peptides by the action of enzymes proteolytiques, and, more specifically, the invention relates to the purification, identification, and characterization 14 new antihypertensive peptides.according to the method of the invention, the production of peptide inhibitors of ace is based on a controlled enzymatic hydrolysis of proteins in muscle of the common cuttlefish, under the action of exogenous proteases, followed by systematic methods of fractionation and identification of biological tests n.in the context of the patent, a number of activities of different origins (proteolytiques digestive microbial, animal and fish) have been testees in generation of antihypertensive peptides. the antihypertensive activity was identified in the hydrolysates.according to the present invention, the enzymatic preparation of bacillus mojavensis a21 and the extract of the common cuttlefish hepatopancreatique produced the most active hydrolytic activity, and the best are obtained for respective hydrolysates with db 16 and 8%.they were fractionnes by gel filtration on sephadex g-25 followed by reverse phase high performance liquid chromatography (rp hplc). 14 peptides with antihypertensive activity have been identified.the peptide val tyr ala pro, vai ile ile phe and ala his ser tyr show inhibitory activity of ace, with the ic50 (concentration required to inhibit 50% hydrolysate ace activity) of 8.7 and 11.6 (6.1); respectively.
