The present invention, entitled? Process based on ion exchange in separate recovery of lactic acid and oligomeric carbohydrates from fermentative media streams ?, claims a procedure for the separation of compounds of commercial interest (lactic acid and oligomeric compounds derived from pectins prebiotic capacity) from media obtained by hydrolysis and fermentation of apple pomace. The hydrolysis is conducted by enzymes, and fermentation takes place by the action of lactic bacteria. These steps may be performed sequentially or simultaneously.
