A process of manufacturing a package of fresh meat by placing the meat product (14) on a support element (6) and closing the package under a gas that has an oxygen content higher than that of the atmosphere, by means of a composed of twin cover films (3), comprising an inner oxygen permeable film (15), in contact with food, and an outer oxygen impermeable film (16), the said compound of twin cover films being placed on the meat product and being heat sealed to the periphery of the support element so that a trapped volume (19) is wrapped inside the package, which contains at least an effective amount of oxygen to inhibit the discoloration of the packaged meat product, the characterization being characterized mentioned process because: - The compound of twin cover films (3), is used as a compound wrapped in a single supply roll (1) and the following and previous unwrapping process to inside the docking station (4); the oxygen permeable inner film (15) and the oxygen impermeable outer film (16) of the twin cover film compound (3) are separated and then superimposed one on top of the other, before the heat sealing step, allowing the creation of a thin layer of air between the two cover films (15, 16).
