The device has a cutting device (5) including multiple knife segments (9) arranged behind each other in a cutting direction. The cutting device is arranged at a distance to a cutting table (2) along a guide (4). Each knife segment is adjustably fed relative to the adjacent knife segments into a knife holder towards the table. The knife segments are detached, braked or fixed together relative to the knife holder by brake devices. The knife segments include a tip with a cut edge including an inclination ranging from plus or minus 0.5 to plus or minus 30 degrees when viewed in the direction.
