PURPOSE: Producing apparatus and method of brown sugar are provided to enable users to obtain the granulated brown sugar having light golden color by using a separate drying process. CONSTITUTION: A producing apparatus of brown sugar comprises the following; a preparation tank(10) mixing micro molasses, B-molasses, C-molasses, and high IU molasses to obtain mixed molasses; a supplying tank(20) for storing the mixed molasses; a first mixer(30) mixing the mixed molasses with white sugar; a second mixer(40) additionally mixing the mixture from the first mixer; a tank mixing the mixture from the second mixer with crystal brown sugar obtained from a soft brown sugar recovery process; and a drier drying the mixture from the tank.
