PROBLEM TO BE SOLVED: To provide an apparatus and a method for producing hollow spherical crystal particles from a saccharide or sugar alcohol by a spray dryer.;SOLUTION: The apparatus includes a storage tank 1 completely dissolving and storing a sugar solution having the saccharide or sugar alcohol whose aqueous solubility is low at a low temperature, at high concentration; a cooling means 2 overcooling the sugar solution supplied from the storage tank 1; a stirring means 9 rapidly stirring the sugar solution overcooled by the cooling means 2, to precipitate fine crystal; and a crystal precipitating means 14 precipitating oversaturated sugar of the sugar solution stirred by the stirring means 9, as fine crystal in a laminar flow condition of the sugar solution within a desired time in which not all the sugar solution is crystallized.;COPYRIGHT: (C)2013,JPO&INPIT
