PROBLEM TO BE SOLVED: To provide a method for synthesizing a tripeptide having a specific structure (β-Ala-Orn-Orn), using peptide synthetase.;SOLUTION: This enzyme solution can synthesize the objective tripeptide and is obtained by removing the body meat, especially, the midgut gland of freshwater clams, cutting out podium or ligament of scallop to make them as organs for extraction objectives, while going through an extraction process that includes a separating or concentrating operation for obtaining the remaining fractions having 100,000 or larger molecular weight. By using the obtained peptide synthase, it is possible to synthesize the target tripeptide by using β-alanine and ornithine themselves that have not been chemically modified as substrates in the presence of ATP and Mg²⁺.;COPYRIGHT: (C)2008,JPO&INPIT
