PROBLEM TO BE SOLVED: To provide: cream sauce used instead of white sauce, and having both excellent palate feeling even after being frozen and heated and excellent cooking properties with a microwave oven; a method for producing the cream sauce; and frozen food product.;SOLUTION: The cream sauce includes using vital gluten and processed starch instead of wheat flour to be used for usual white sauce. In the cream sauce, the amount of vital gluten used is 0.01-5 wt.%, and the amount of processed starch used is 2-10 wt.%, based on the weight of the prepared cream sauce. A starch raw material excluding processed starch may be used together with processed starch, and the amount of a starch raw material used, excluding processed starch, is 4 wt.% or less. Furthermore, when the amount of cream sauce used is 4.5 wt.% or less, wheat flour may be used for the cream sauce.;COPYRIGHT: (C)2010,JPO&INPIT
