METHOD FOR THE PRODUCTION OF BRINED WHITE CHEESE VIA STAINLESS STACKABLE TRAYS AND STAINLESS PELLETS-CISTERNS OR VIA STAINLESS PALLETS-CISTERNS ONLY
Novelty: A method for the production of brined white cheese either via use of stainless stackable trays and stainless pellets-cisterns or via stainless pallets-cisterns only is disclosed. Constitution: The dry suitably deep stackable and tiltable salting tray (1) having its three sides tight and its angle (2) reinforced to facilitate the stacking and tilting of multiple trays; a maturation and storage pallet-cistern (3) having reinforcements at its ends (4) and an independent sealing cap (5) peripherally reinforced (6) with a cavity (7) meant to receive the sealing elastic (8) having the brine replenishment hole (10), the brine level indication hole (9) assisting the expansion of the fermentation gases, a valve enabling the taking of samples via a syringe and a perforated iron plate-cheese spacer (11) retaining the cheese into brine. Sealing is obtained via the specific closure means (12) or via an eccentric cam. The pallet-cistern bears a base of hollow steel sections (13) enabling stacking. The reinforcements and the base are of closed completely-welded cross sections. The traceability of the pallet-cistern is obtained by use of tag serving for the electronic storage of all cheese data.
