the concentration of anthocyanins from grape marc was in tunisia through the concentrator under reduced pressure, that is to say, it's the crude extract to remove the eau.le heating can be detrimental to the compounds containing aromatic rings of type & corrections cyanes.the sulphuric acid content in the crude extract, which is the basis of the extraction is also cocentre. but the high levels of the weak acid is not required, the organic dye may be toxic. for all the disadvantages, it is abandoned.we used laboratory: nanofiltration membrane technique to replace the operation of evaporation. the method has the following characteristics: membrane materials, polysulfone, polyamide / nature: nf / ru00e9tentionmgso4: 96%, 90 c / ph / temp max: 2 / 114 / cut-off threshold: 150 - 300.we have obtained the best conditions for the concentration of crude extracts from the membrane as described above. the concentration is similar to that obtained by the concentrator by heating under reduced pressure
