The present invention relates to a method for producing red ginseng liquid concentrate which has simultaneously boosted levels of ginsenoside Rg3 and Rh2 components. A means for implementing the method for producing red ginseng liquid concentrate comprises producing the red ginseng liquid concentrate, which has simultaneously boosted levels of ginsenoside Rg3 and Rh2 components, by causing a hydrolysis reaction to take place by mixing a red ginseng liquid extract with an organic acid, and more specifically comprises producing a red ginseng liquid concentrate, which has simultaneously boosted levels of ginsenoside Rg3 and Rh2 components, by causing a hydrolysis reaction to take place by mixing a red ginseng liquid extract with an organic acid selected from malic acid, racemic acid (tartaric acid) and succinic acid. The production method for a red ginseng liquid concentrate according to the present invention provides a red ginseng liquid concentrate having simultaneously boosted levels of ginsenoside Rg3 and Rh2 components which have particularly superior efficacy in cancer resistance, cancer treatment, anticancer-agent toxicity reduction, cancer prevention, immunity enhancement and thrombosis prevention, and thus the red ginseng liquid concentrate of the present invention is effective in exhibiting superior efficacy in cancer treatment, cancer prevention, immunity enhancement and the like, and, also, the act of causing hydrolysis to take place by using an organic acid which is beneficial to the human body while using the red ginseng liquid extract which has better pharmacological effects than white ginseng obviates the need for a procedure involving the additional use and removal of purified water for the purpose of purification, and, since absolutely no liquid waste is produced, it follows that the red ginseng liquid concentrate having simultaneously boosted levels of Rg3 and Rh2 components is produced by means of an efficient and simple process. In particular, despite involving a straightforward process, the production method makes possible economic and efficient production of red ginseng products in which ginsenoside Rg3 and Rh2 are boosted to higher concentrations than in existing red ginseng liquid concentrates.
