PURPOSE: A manufacturing method of fermented soybean paste is provided to use Rhizopus mycelia having a property self-producing an anti-oxidant activity material, besides conventional edible or medicinal mushrooms with soybeans as a culture medium in a bamboo tube. CONSTITUTION: After soybeans are soaked in water, the strained soybeans are sterilized at 110-130 deg. C for 15-25 minutes. Predetermined amount of Rhizopus spawns are injected into the sterilized soybeans before cultivating at 30-35 deg. C and 60-70% of humidity for 20-30 hours for Rhizopus mycelia to take root on the soybeans. The soybeans in which the Rhizopus mycelia take root are mixed with boiled soybeans at the same amount, molded, dried for 2-3 days, and secondly dried for 30-40 days to manufacture fermented soybean blocks. The fermented soybean blocks are soaked in salt water for 20-30 days to ferment. The fermented soybean blocks are discharged, mixed with salt and soy sauce, pulverized, and aged at room temperature for 150-1,000 days. The inoculum size of the Rhizopus spawn is 0.1-0.5% (0.1-0.5g/kg).
