PURPOSE: A producing method of dried persimmon using a persimmon peel extract is provided to process fresh persimmon with the n peel extract instead of vulcanizing. CONSTITUTION: A producing method of dried persimmon using a persimmon peel extract comprises the following steps: peeling dried persimmon, and hanging the persimmons with a line; spraying 20mml of solution containing 1-20%(w/w) of persimmon peel extract to the hanged persimmon; and dipping the dried persimmon in the solution for 5 minutes, and settling the dried persimmon at 25 deg C for 30 minutes for naturally drying an aging. The persimmon peel extract is obtained by the following steps: dipping 10%(w/w) of persimmon peel into a 50% pretanol-A solution; settling the persimmon peel for a day at room temperature; and extracting the persimmon peel at 60 deg C by heating the persimmon peel until the volume is reduced to the half.
