FIELD: biotechnologies.;SUBSTANCE: strain Enterococcus hirae BC - 37 having high antagonistic activity is deposited in the Russian National Collection of Industrial Microorganisms (RNCIM) under the registration number VKPMV-10090 and may be used, for instance, in production of such cultured milk foods as kefir, cottage cheese or ryazhenka.;EFFECT: invention makes it possible to produce a strain having high antagonistic activity and high speed of milk turning sour.;3 ex
