PROBLEM TO BE SOLVED: To provide a processing method and a simple semi-automatic injection machine using non-edible part of an exotic eel and adding fat and an extract to make up for an estimated shortage of raw materials of an injectate.;SOLUTION: A injection processing method and a broiled eel processing method for making a hard meat soft with subcutaneous fat and making crispy, mealy or delicious taste with rich fat contain either of: a process of injecting an injectate added fat extracted by cutting and squeezing heads and guts of exotic eels having low fat and living in the vicinity of the south hemisphere so as to make up for a shortage of organic eel fat, or decomposing and micronizing heads and guts of the exotic eels by a super high atmospheric pressure to be added to an extract liquid as a pre-treatment for applying broiled eel processing to exotic eels having thick subcutaneous fat and living in Asia or subtropical zone, inserting an injection needle arranged almost circularly from head or from a cross section of a headless cut state, injecting the injection needle into meat near to skin by using a simple injection filling device; a process of pickling the eels in the injectate; a process of heating the eels; or a process of steaming the eels.;COPYRIGHT: (C)2014,JPO&INPIT
