ANTIAGING AGENT FOR RICE CAKE OR DUMPLING, MANUFACTURING METHOD OF RICE CAKE OR DUMPLING USING THE ANTIAGING AGENT, AND RICE CAKE OR DUMPLING INCLUDING THE ANTIAGING AGENT
PROBLEM TO BE SOLVED: To provide an antiaging agent for a rice kake or a dumpling, a manufacturing method of a rice cake or a dumpling using the antiaging agent, and a rice cake or a dumpling including the antiaging agent.;SOLUTION: The antiaging agent for a rice cake or a dumpling has a water-soluble nitrogen index of 70 to 100%. The soybean flour may be made from as raw material lipoxygenase-deleted soybean. The manufacturing method of a rice cake or a dumpling includes the steps of: heating one or two or more kinds of raw materials selected from rice raw material, powdered arrowroot, potato starch, bracken powder, dogtooth violet starch, tapioca starch, wheat flour, wheat starch, lotus root starch, sweet potato starch, corn starch, millet flour, and processed starch; and adding 0.01 to 1.0 pt.mass of the antiaging agent to 100 pts.mass of the raw material prior to molding.;COPYRIGHT: (C)2014,JPO&INPIT
