摘要

The present invention refers to the obtention of water-soluble chitosan gels of low molecular weight by enzymatic technology using anionic biopolymers, particularly pectin. The gels obtained by the formation of polyelectrolytic complexes using a pectin methyl esterase treatment. The gels developed in this invention are applied in the industries such as food, agriculture, cosmetic, biotechnology, biomedical and materials.
